BAY VILLAGE, Ohio — Bay Village has an appealing new dining and nightlife destination called Wolf & Co., which opened last week on Wolf Road. The casual wine bar and pizzeria is operated by Mandi Burman and Dan Deagan, a well-known figure in the Cleveland hospitality scene.
Equal parts wine bar and restaurant, Wolf & Co. pairs a wide selection of wines by the glass and bottle with a creative food menu starring thin-crust pizzas.
Executive chef Grant Thrasher is in charge of the menu, which goes well beyond the pies. To start, there are Caesar and chef's salads, seasonal meat and cheese boards, raw oysters, roasted bone marrow and braised oxtails served with flatbread.
The pizzas are stretched, topped and then baked in a beefy deck oven positioned behind the bar. There are nine pizzas in all, ranging from a classic Margherita topped with housemade mozzarella to a savory pie capped with braised beef, gorgonzola and roasted garlic sauce.
For dessert, the chef prepares cannoli, tiramisu, crème brûlée and cheesecake.
To drink, there are approximately 20 wines by the glass and 70 by the bottle. Those pours are joined by beer and cocktails.
The dinner-only restaurant seats approximately 100 guests in the dining room and at a long bar that winds its way past the pizza oven. In spring, the restaurant will add generous patio seating to the mix.
The name, borrowed from the street outside, is a way to honor the neighborhood at large, says Burman.
"People in Bay really love their city, so we wanted to be a part of the community," she explains.
