RECIPE: Pollo con Carciofi
What you will need:
(Chicken with artichokes)
4-6 pieces of boneless chicken breast (12-14 oz)
Sweet Marsala 1 & 1/2 cup
Olive oil 1/2 cup
Salt to taste
Pepper to taste
Heavy whipping cream 3 table spoons
Chicken stock 8 oz
Flour
Butter 2 table spoons
INSTRUCTIONS:
1) Pound breast to an even filet
2) Heat olive oil in a frying pan medium heat
3) Dredge the breast in seasoned flour
4) Place breast in heated oil to brown on both sides
5) Place browned breast on paper towel to dry excess oil
6) Discard olive oil
7) Remove from heat add sweet Marsala
8) Flambé sweet Marsala cook off and reduce alcohol
9) Add chicken stock when sweet Marsala is reduced
10) Add heavy whipping cream
11) Add salt and pepper to taste
12) Reduce down to 50%
13) Add butter
14) Reduce until sauce starts to thicken
15) Add artichoke hearts cut into quarters
16) Reduce until the artichokes are incorporated
17) Plate and enjoy!
