Betts aims to become a new neighborhood staple.

CLEVELAND — In 2016, following an ambitious building restoration project, The Kimpton Schofield Hotel opened its doors in the heart of downtown Cleveland. 

When it did open, it did so with Parker’s as its principal dining option. But when the pandemic came to town, Parker’s – like all restaurants – was forced to close. Management decided to take advantage of that downtime to completely rebrand the restaurant. 

The outcome is Betts, which opened its doors in early August.

Visitors to the new space will see a bright, fresh and contemporary dining room wrapped in gleaming-white subway tile. The look conjures images of a New York diner that buzzes with energy throughout the day.

The goal, according to General Manager Jason Reiss, is to appeal not just to hotel guests, but also to downtown residents, workers and visitors. In short, Betts aims to become a new neighborhood staple. To do that, chef Rob Stauch created an approachable but health-conscious menu that runs from morning through evening, including weekend brunch. Guests who do visit will find American dishes with an emphasis on freshness, quality and whole foods. There are dishes that cater to all diets, including vegan, vegetarian, dairy-free, gluten-free and keto.

“It’s easy for people to eat healthy here, but if you want a burger we have that, too,” says chef Stauch.

In addition to conventional dining, the restaurant features a cooler filled with grab-and-go snacks and beverages that are available any time of day or night.

Outside, a spacious patio overlooks the Heinen’s Downtown building as well as the rest of the city skyline. Coming soon to that little urban oasis will be heated Plexiglas greenhouses for small groups to enjoy well into winter. The festive and private spaces are sure to be a hit.

“Our goal is to have something for everyone,” adds Reiss. “We have created an environment for our guests to dine, have drinks with friends or enjoy solitude.”

The name “Betts” is a tribute to Elizabeth Schofield. Her husband, Captain Levi Schofield, was a Civil War officer and later a prominent architect who designed the 14-story Schofield Building.
