Steak Oscar for Two
Steak:
- 2-6oz. filet mignon steaks
- Salt
- Black pepper
- 4oz. lump crab meat, drained
- Asparagus
Hollandaise Sauce:
- 2 sticks unsalted butter
- 3 egg yolks
- ¼ cup lemon juice, plus more if needed
- 1 teaspoon Cajun seasoning
- Salt
- Minced chives
Preheat oven to 450 degrees.
Season steaks well with salt and pepper. Heat a cast iron skillet or grill pan over medium-high heat. Add steaks to the skillet and sear on each side for about 3 minutes. Place skillet in oven and roast for about 6 minutes for medium-done steak. Remove steaks, place them on a sheet pan and tent with foil.
Place asparagus on a sheet pan and roast in oven for about 5 minutes. Remove and set aside.
Place drained crab meat in a bowl and set aside.
Make hollandaise sauce by placing butter in a medium pot and melting over medium heat. Meanwhile, place egg yolks and lemon juice in a blender and blend well. While the blender motor is running, slowly pour in melted butter. The sauce should be thick and creamy. If the sauce is too thick, add a little more lemon juice. Add Cajun seasoning and a pinch of salt and continue blending to combine. Keep warm.
Serve the Steak Oscar by placing an even number of asparagus on two plates. Top each with the steaks. Place crab meat on top of each steak and pour warm hollandaise sauce over the top of the crab meat. Garnish with minced chives.
