CLEVELAND — Instead of eating the same food all week, are you looking for something different in your diet?
With more people cooking for themselves as stay-at-home orders continue amid the coronavirus pandemic, we spoke with Cleveland Clinic dietitian Kristin Kirkpatrick for her expert advice.
“Don’t overthink your meals," she said. "You can get a really nutrient-dense, perfect meal with simply three ingredients.”
Those ingredients are:
- Beans
- Grains
- Frozen vegetables
She said adding these into your meals will boost your daily nutrition.
"This is not the time to be a grand chef and use 20 ingredients," Kirkpatrick said. "This is the time to focus on nutrient density, getting colors, getting plants and getting whole foods as much as possible.”
Another suggestion: Finding ways to reuse foods you already have.
"If you have a sweet potato in the house or you have sweet potato chunks in your freezer, you can take that and you can make sweet potato hash in the morning time to go alongside with eggs, or just have it alone. In the evening you can put it next to a lean source of protein, if you’re able to get salmon or chicken or anything like that.”
