What's new and sweet at Sugar Valley Maple Farms in Middlefield?

If you're looking to get outside this weekend, Sugar Valley Maple Farms is having an open house on Saturday as part of the Ohio March Maple Madness Tour.

MIDDLEFIELD, Ohio — Maple syrup is a topping that is loved on pancakes, waffles, french toast and specialty dishes.

Northeast Ohio is known to have many maple trees that produce local maple syrup.

James Miller owns and operates Sugar Valley Maple Farms in Middlefield, where there are 3,100 maple taps. Out of those 3,100 taps, 80,000 gallons of sap is collected.

"We're not hurting the tree, it has a lot more sap. Two percent of that is sugar and ninety eight percent water, and to get rid of that we run it through the reverse osmosis system. That takes care of seventy percent of the water," said Miller.

Miller also mentioned that after running the sap through the evaporator, it takes care of 480 gallons of sap per hour, which then generates 1,500 gallons of syrup and is 100% organic.

This Saturday, the public is welcome to an open house at the farm, which is part of the Ohio March Maple Madness Tour. Miller said they will be making maple candy, maple cream, maple sugar, and maple cotton candy.

"So far this year we are having a very good year," said Miller.
